your gateway to Southern Italy and also the heart of the true Neapolitan Cuisine. My name is Salvatore Di Scala, owner and Executive Chef. I have lived most of my life in Italy, the city of Naples where I was born, the island of Ischia, and France Provence. These places have always inspired me because of the people and their passion for cuisine made with heart and soul. In my childhood, my mom Anna and her sister Linda cooked traditional Neapolitan cuisine for many decades, instilling me with classic regional culinary skills and inventive style. I have been blessed with the opportunity to travel across Europe and America as a consulting chef. I have worked with many great executive chefs whom I am very proud to call my friend and still have a professional and personal relationship with, I have learned the art of making traditional Neapolitan pizza from one of the Greatest Pizza Masters in Italy, Gaetano Fazio. I am also proud to consider Madison my second home beginning in 1984 when I first settled in America; where I became involved with the local boxing program.
and share the experience of my travels through the traditional Neapolitan cuisine and enchanting Neapolitan culture. As your Executive Chef at Naples 15, in the most humble way, I would like to be your Monzu, creating a symphony of cuisine. My unique signature and culinary skills are inventive, passionate, and satisfying…and like we say in Naples, “Ca si no pare brutto” which means the food must taste great! Otherwise it looks bad. I would like to dedicate Naples 15 to my family and friends in Europe and America and to the city of Madison which I have loved since I first came here.
